For the Avocado and Egg:
- half and avocado
- 1 egg
For the Spicy Mushrooms:
- 3 or 4 chestnut mushrooms (sliced)
- 1 garlic clove (crushed)
- 1 quarter of a chilli (finely chopped)
For the Garlic Ciabatta:
- 1 garlic clove (crushed and finely chopped)
- a pinch of fresh parsley (roughly chopped) or 1 tsp dried parsley
- half a ciabatta
For the Two Sauces:
- low fat yoghurt
- parmesan (grated)
- juice of half a lemon
- a handful of basil
- a glug olive oil
- a few pine nuts (lightly toasted)
- salt and pepper
And however much smoked salmon you want with a squeeze of lemon and some pepper!
Preheat the oven to 200 degrees. Slice, chop and cut all ingredients whilst the oven is heating up – you’ll save yourself a lot of stress if you prep everything first.
The first thing you should make is the sauces, the first is a classic pesto. Simply put basil, pine nuts, olive oil, half of your lemon juice, parmesan and salt and pepper into a blender and blend until smooth. Add more of whatever ingredient you like, season to taste. If it’s too dry – more oil or lemon juice, too wet – more basil etc, it’s entirely up to your tastebuds.
The second sauce uses all the same ingredients plus the yoghurt, minus the oil, and the technique is much the same, mix well and set aside for later.
before cooking anything you should also make the garlic butter for the ciabatta. Just mix the garlic, parsley and a large knob of butter and whisk well with a fork or place all the ingredients in a pestal and mortar and smash them together.
Take the avocado and remove pip and about a tablespoon of flesh, making a nicely sized well for the egg to sit in whilst it bakes. Crack the egg into the well, add salt and pepper (we also like to add a drop of hot sauce here) and place it in the oven for 15-20 minutes, until the egg is cooked through. You may have to discard some of the egg white as there may be slightly too much, you don’t want it overflowing.
Butter your ciabatta and place it in the oven with the avocado for the last 10 minutes.
Whilst the egg is cooking put a dash of olive oil into a pan and leave it to heat up. Once it’s hot add the chilli and fry gently for a few minutes. Add your mushrooms and garlic and fry for a further 5 minutes or so, the garlic should be browning and the kitchen will be smelling delicious!
Once the egg is fully cooked and the ciabatta is nicely toasted place them on a plate with your sauces, mushrooms and smoked salmon. Put the plate on a tray and take yourself back to bed, this breakfast is best enjoyed slowly!
